Crock Pot Short Ribs

Since I’m constantly cooking, tweaking, and devouring new recipes, I wanted to start writing posts about what’s for dinner. Usually it paleo, typically delicious, and rarely consumed before 8pm… I’m becoming a faster cook, but after work and a workout, we are always eating too close to bed. Best part of every meal are the leftovers… Oh those already made, mouth watering lunches. Haha. These posts will hopefully help me remember the good, bad, and recipes worth repeating.

Ingredients
3-4 lbs beef short ribs
1 tsp salt & 1/2 tsp pepper
1 Tb bacon grease
1 onion, chopped
¾ cup red wine
1 cup apple cider vinegar
⅓ cup honey
1 tsp. Tabasco
1 jar (7 oz.) tomato paste
¾ cup beef stock
¼ cup GF Worcestershire sauce
¼ cup Coconut Aminos
1 tsp chili powder
3 cloves of garlic, minced
2-3 sweet potatoes, cut into large cubes

Cooking Steps
• Season short ribs with s & p
• Brown in a hot pan w/bacon grease
• Chop Onion, layer on bottom of crock pot
• Place ribs into slow cooker
• Pour wine, vinegar, honey, tabasco, tomato paste, stock, Worcestershire sauce, aminos, spices, and garlic into pan and bring to a boil
• Layer potatoes around ribs
• Pour liquid from pan over ribs and potatoes
• Cook on low for 8-10 hours or if short on time, on high for 2 hours, then low for 4 hours.
